By Megan Walter and www.thethings.com
Halloween parties in the classroom are in full swing. These Monster Mash Rice Krispie Treats are a quick and quirky take on the classic school snack that are perfect to send with your kids to school. Not only are these little monsters adorable and easy to make, but they are also completely nut-free!
This snack is also a great one to get your kids involved in. They will especially enjoy dipping the squares and giving the monsters their little eyes, I know I did! Check out the below recipe from The Whisking Witch to get started!
Ingredients
Rice Krispie squares
1 bag of Marshmallows (about 45)
1/4 cup unsalted butter
1/2 tsp vanilla extract
6- 1/2 cups Rice Krispies
Candy Coating
3 packages of Wilton Candy Melts Purple, Blue and Yellow
1/2 cup white candy melts for the eyes
Chocolate covered quinoa puffs (you could also use chocolate sprinkles)
Vegetable Oil (I used Canola)
Instructions
Step 1: Start by melting butter in large saucepot on very low heat. If you heat the butter up too quickly it will start to brown and it will not have the same flavor.
Step 2: Add marshmallows and vanilla; cook until marshmallows are completely melted and the mixture is well blended, stirring constantly.
Step 3: Next, remove the marshmallows from heat and add your cereal. Mix well with a wooden spoon.
Step 4: With oiled fingers, Press your mixture into the bottom of a 13×9-inch pan that either has been buttered or is lined with parchment paper. Let your squares cool completely.
Step 5: First, melt approximately 1 cup of candy melts in a small bowl in the microwave according to the packaging or at 50% power for 1 minute. Stir well, making sure to scrape the bottom and sides to prevent burning. Then, a continue microwaving at 50% power for 30 seconds at a time until completely melted. At this point, you want to be really careful not to burn your candy melts otherwise you won’t be able to dip your squares.
Step 6: Once everything is melted, add about y ½ teaspoon to 2 teaspoons of vegetable oil to the melted candy melts and stir to combine. The more oil you add the smoother the finish, but go slowly so that it doesn’t become too liquid.
Step 7: Now, cut up your rice Krispies into small squares. Dip one end of the Rice Krispie Treats in the candy melts and set on parchment paper to cool.
Step 8: Meanwhile, place 1/2 cup white candy melts into a bowl and melt using the same directions as before. When they are melted, spoon the melted candy into a plastic bag and cut a small hole in one of the corners. You can now use this as a piping bag to pipe on the whites of the monster’s eyes.
Step 9: Place one chocolate covered quinoa ball or chocolate sprinkle in the center of each eye to make a pupil. Make sure to put these on before the candy hardens otherwise they will not stick.
Step 10: Allow squares to cool at room temperature for approximately 40 minutes or until candy melts have completely hardened.
The only thing left to do now is to enjoy these with your friends and family on Halloween!
